In this list you can see every category and also if they have assign a mobile template too. From here you can assign to a mobile category template every category template that you have there. Also, you can create another mobile template from there and assign/link it.

That option means full size of the original file. For example your image is 1920 X 1440, and this setting option has also 1920, and 0 because you can have different values here and not only 1440.

There you can have 1/2/3/4 values because it depends on what you want to achieve. For example you can find a lot of examples here which means the same like in our theme:
