Unfortunately the only why you can customize a demo is to install it, also you can import elements from tagDiv Cloud Library. You can make a new install on sub-domain or localhost and install there the demo.

From what I know you can migrate the website to another website using some plugins, in this way your website will migrate will all content and templates.

But in order to migrate from a theme to another one it maybe necessary to make some adjusts, unfortunately these are not cover by the theme support these can be made only with custom work .

Unfortunately for the moment this can be cover only with custom work, sorry!
The mobile theme files can be fount here -> wp-content/plugins/td-composer/mobile unfortunately I do not know a query that can remove a specific category on mobile theme.

There is no need to use any plugins for this, all you’ll need to do is to go in Appearance > Widgets, extend the element that you want to hide on mobile -> https://i.imgur.com/CpBD0tR.png after that set a class, for example -> https://i.imgur.com/8tmfi6L.png after that go in Theme panel> Custom code> Advance css and set the css to remove the block/element on mobile -> https://i.imgur.com/qe1Yzwh.png now, all elements that have set this class will be remove/hide on mobile.
