Those settings will stretch the header and footer elements, the breadcrumbs are not part of the header. They are generated in the page content. At the moment there are no settings available to modify the page content width as a whole.

The mobile theme is intended to provide a lighter version of the website on mobile. This plugin is optional, you can choose not to use it. It can either be active or inactive.
Please note that in the latest update an option to hide elements or rows has been added. So for example, if you have a page that you consider to be heavy for mobile, you could hide the rows/ elements you want on mobile

This effect is probably related to the Visual composer elements used on the homepage, since post pages load properly

There is a delay before the homepage content is displayed from what I can see, but I believe that is how Visual composer does for some of it’s elements.

I believe you are referring to the excerpts displayed on modules. Please note that not all modules display an excerpt. That could only be achieved by modifying the module files.
If you are referring to the post subtitle, that will be displayed in the post page only, not on modules.
