If all your posts use the one post type which is set in the theme panel then you should be good to go. You can try and change the post style from theme panel to another default one and see if that change applies to all the posts. If that’s the case then you can simply create your post template and apply it.

On the pages you disable the Mobile theme you will have to edit the responsive page in order to have the same layout. You will have to select the mobile Viewport and start customizing your mobile layout. This will affect only the mobile view: https://www.screencast.com/t/QjfltxaJSopt
