Is there a way to do this? I have it set to 3 modules per row for desktop but that doesn’t look good on mobile so I would like to change it on smaller viewports to only 2 modules per row.

That demo doesn’t use the optional mobile theme plugin, so on mobile the default responsive version will be displayed.

The mobile front page is predefined, it will display a top grid containing featured posts

Followed by a latest articles section. You can choose to use the plugin or not, there will be no problem either way.
Note that if the plugin is active, mobile pages will not display the same content as on desktop. Each page will have a simple mobile editor where the page content has to be entered (text, images etc)

Page builder elements will not be displayed on mobile with the mobile theme active.

I just visit a website that website is using Same newspaper theme.

Second – I would like to know how can I edit separately my mobile version of site without to change the desktop website.
The Mobile Theme plugin is not helping me because it’s removing all the information.

You can use both. AMP posts will be served only through the Google search results page, accessing the website through other means will display the mobile theme if active, or the default responsive version if not active.
The mobile theme will have it’s own ad spots. When the plugin is active a mobile section will appear in the theme panel
