Please note that at the moment our theme has not been fully tested to work with WP 5.8, our developers are working on it as we speak but we don’t recommend upgrading it just yet. I have seen some users running WP 5.8 and we are running it to for testing purposes. There were no errors when updating, Can you please try to remove and reinstall tagDiv Standard pack ? It seems that it affected the content of that plugin or it can also be a glitch.

Also for the images the best optimization is the mechanical one where you edit your images using Photshop or some sort of app.

The mobile theme plugin has the advantages for page speed and optimization. On the other hand it offers almost no customization.
From what I have personally seen I would choose the mobile templates version because the AMP future is not so bright, Google will no longer take AMP in consideration that much.
