Normal the custom css that you have set here https://prnt.sc/vc7fl5 should not be lost, but to be sure, you can move that code from there in theme panel> custom code> custom css.
Unfortunately I do not know what to say about the code set in “Snippets” plugin, normal if the code is not set in theme/plugins files, then this is saved in database and should not be lost when you update the theme or plugins. But just in case, please make first a full backup.

The Mobile theme was specially designed for optimization on mobile devices. Unfortunately on mobile theme you cannot do much changes of design. If you want to have the same design as on desktop mode you can achieve that by simply disabling the mobile theme.

You will have to recreate your pages into the Mobile editor or completely disable the mobile theme. The mobile editor will not render shortcodes !

Also you can disable mobile theme on certain pages or posts by following this setting:

You can create your sidebar for a category, assign it on the post template X for example, and then assign post template X to the category.

I see that the amp version is displaying correctly on posts -> https://i.imgur.com/bSFSx3H.png also using the mobile theme plugin with amp you can control the design using the options from theme panel > posts and custom post types -> https://i.imgur.com/Z5bWQsg.png for this you need to have enable tagdiv Standard pack -> https://i.imgur.com/rm8uXpv.png
Also the amp is working on homepage, but for this you need to use the mobile theme version not the responsive version -> https://i.imgur.com/iXV8opv.png
Please make sure that you are using the mobile theme plugin with one of these options -> https://i.imgur.com/LOSRIeS.png and with this one -> https://i.imgur.com/91LKBFh.png also check the settings for responsive version on mobile as in my above screen.
