Installing a demo without content will not import demo categories, posts etc. Only the theme panel settings and custom design (where available).

If you install a demo with content it will import demo posts, categories etc. Installing another demo will remove all the elements imported by the previous one, including demo categories.

Only categories from the demo will be removed, categories you have created will not be affected. So it would be highly unusual if your own categories are deleted by a theme demo. Let me know.

I will try to explain it better. Instagram can be added either directly in the composer, then it can be edited by editing the page/cloud template with the tagDiv composer and setting the ID you want

Also contact your hosting provider and ask them to install PHP 7.0 or 7.1 for example, that version you are using is quite old and could lead to problems. Usually thsi can be done in the cPanel

The hosting provider should be able to increase the WP-memory and the other parameters mentioned in the guide if necessary. Then the issue should be solved.

There is no structured data imported by the theme regardless of installed demo. Easiest way to add schema markup would be by a plugin, here are some guides

Try some free plugins to add recipe schema to your articles, should be no problem in the matter. The theme will add basic and required structured data, for additional elements plugins can be used.

Yes, you can use the same code if you reset the old install first. Access the system status screen and pres the reset button for the license.
There is no limitation in moving a license on another website/domain

We do not recommend altering the theme db structure. All the fields are necessary otherwise they would not exist. The fact that you faced the issue mentioned has no tie to the theme itself or the data added to the db by the theme. The only reason your settings got reset that I can think of is uninstalling a demo or installing another demo.
