I could give you a code to center the header logo, in Header style 3. Or you could choose another header style that displays the logo centered from default. Like Header style 10 for example

If you updated the theme, please go to the plugins section and deactivate the tagDiv composer. This is activated by default when the theme is updated to the latest version, or installed for the first time

Everything should display like before the update, after that. Having both editors active could lead to some Visual composer elements or settings not functioning properly. Editing Visual composer pages with the tagDiv composer is not recommended as well.
It is always best to make full backups before updating themes, as mentioned here

Please go to your plugins folder and deactivate the tagDiv composer. This editor is activated by default, and in some cases when Visual composer is active as well, it could result in issues with Visual composer elements.
Try deactivating the tagDiv composer, and everything should display as it was before. Maybe clear your cache if you have any installed.

If you do not have any plugins on the new install, that could be affecting the image, then that is the way the thumbnail should be displayed in the first place.
Maybe the images are different on the first website that you provided. You might have made there some image optimization, or installed plugins in this matter.
That could be the case, if there is a difference between the image quality. The theme does not affect the image quality, the thumbs will simply be created from the featured images yo use.
Please check the installed plugins on the website where the images are clearer, or maybe the image optimizations made there.
