The Big grids do not have the ajax filter option. Only blocks have that feature. The grids have other differences from blocks as well.
It would not be easy to implement the filter for the grids, and would require code modifications in the theme files (if even possible). You can only use the available filtering options, in the filter section of the grid slide.
Maybe this will change in future updates, and this will be available as an option.
Rows can only be split in a maximum of three columns, with the tagDiv composer. So you could only have three individual sliders on a row.

The images and logo displayed should be the same for both versions of the theme. I believe nothing has changed in the theme updates to affect the image quality. Try testing with all plugins disabled on both installs, and upload the same photo. Then check for differences.
Also remove any modifications done through the theme files if there are any (like image filters)

The mobile theme plugin is optional. If it is not activated, the same content from desktop will be displayed on mobile devices. The theme is fully responsive and will adapt in all cases.

There is no option to modify the width of the mobile menu. It could only be done with custom code. That is the case for the horizontal line that you mention, between the menu items.

Try creating a test page with the same grid and random post sorting option and choose a different category. Check if the posts displayed are randomized. It could be a plugin conflict as well.

I have inspected your website, and the mobile theme is not displaying at all on your website. Please note that the this might be happening because of a plugin conflict.
You can see if that is that case by deactivating all your plugins except the plugins included in the theme package, and clear any caching installed. Then check if then mobile theme is working.
It could also be the caching plugin that you use. It is recommend to use the WP Super Cache plugin for optimal results
