They should work same as before. That’s unusual, I also have both latest version of Yoast and the AMP plugin active. The AMP post pages work properly. Could you test this by leaving only theme plugins and Yoast active? as a quick test.
The plugin is optional, you could simply not use it. Simply by the way the plugin works such effects can be visible.
You could try other render blocking plugins but the results may be the same or worse, I can’t make any recommendations as well. Maybe consider not using any if the results are not the best.

Make sure the theme requirements are met. Also contact your hosting provider to ask them to check why there are internal server errors. There could be error logs mentioning the cause.

But as you say, the background link can be set only in general, not per category. So a link can be set for the whole website only, not individually by page.

It seems it does not work, thank you for mentioning this. There seem to be some problems after integrating the multi-purpose plugins with the composer. We try to test all the settings but some may be unintentionally overlooked. It will be fixed for the next theme update however.
