The Mobile theme was specially designed for optimization on mobile devices. Unfortunately on mobile theme you cannot do much changes of design. If you want to have the same design as on desktop mode you can achieve that by simply disabling the mobile theme.

You will have to recreate your pages into the Mobile editor or completely disable the mobile theme.

Also you can disable mobile theme on certain pages or posts by following this setting:

To edit the header with tagDiv Composer, you need to use a cloud header from tagDiv Cloud Library.

There is no way to have a large menu on mobile like on desktop, therefor on mobile version there is set a different header, this can be adjusted with tagDiv Composer too, -> https://i.imgur.com/I1MSYIb.png if you want to can change the menu.

Unfortunately this element can not be added in mobile theme plugin, but, if you have one of the latest theme versions -> https://imgur.com/xsUh0vU, then you can use the responsive option from mobile theme, in this way you’ll display for that page the responsive version from desktop and the newsletter will be there.

This image -> https://i.imgur.com/UacwRSX.png is the footer image, this will take you to the homepage, in this way is working the logo, unfortunately the only way to remove the link from the mobile logo is to remove the link from mobile theme files.

As long the mobile decide do not have the hover element incorporate as desktop this featured will not work (it exist, but is not render on touch screens).

Yes, if you are using cloud templates, these can not be display on mobile theme as responsive like the pages and posts, this suggestion is added on our list for improvements, but this is the developer decide when it will be improve, as far i know, there will be soon an update, but I do not know if this option will be integrate.
For the moment the developers goal for mobile theme plugin is the speed, not the layout.
