Please note that you can customize the AMP pages only with the settings from Newspaper -> Theme panel -> Mobile theme.

The TagDiv Composer plugin is generating the code and this is important for your page to work well. If you want to reduce that HTML code, then you can delete the elements which you don’t need from your website page.

There is no element to bring just the excerpts, for example you can use any flex block to edit the excerpts.
If you use a pro/cloud template, then you can modify a template and for all posts which has assign that template, the modification will be displayed the same. Edit the template with TagDiv Composer, select the title element and you will have some settings for the font in that element’s settings. Example: https://www.screencast.com/t/1yhzlW119vkZ
